Lotus Pork Rib Soup


Ingredients:

1 kg of pork ribs
15 pieces of peeled garlic, slightly mashed
25 pieces of sliced lotus roots
8 tablespoons of soy sauce
2 tablespoons of ground pepper
2000 grams of chicken broth

Cooking Method:
1. Place all the ingredients into the chicken broth and boil for 30 minutes.
2. Serves 4 diners.

Fried Radish Cake


Ingredients:

800 grams of fine radish
5 eggs
2 tablespoons of soy sauce
2 tablespoons of fish sauce
2 tablespoons of oil

Cooking Method:
1. Steam the radish in double the amount of water for half an hour.
2. When it is ready, cut the radish into cubes and fry them in oil.
3. Whip the eggs thoroughly in a separate bowl.
4. Pour the whipped eggs, soy sauce and fish sauce over the radish.
5. Continue frying the radish cake until it turns golden brown. Serves 4 diners.

Rainbow Greens


Ingredients:

100 grams of broccoli florets
30 grams of sliced carrots
30 grams of diced green capsicum
30 grams of diced red capsicum
30 grams of diced yellow capsicum
10 pieces of salted fish
30 grams of dried scallop

Seasoning:
100ml of clear chicken soup
1 tablespoon of corn flour
2 egg whites
1 tablespoon of oyster sauce
2 tablespoons of oil
1 teaspoon of salt

Cooking Method:
1. Fry the salted fish in 1 tablespoon of oil. Set aside.
2. Stir-fry all the vegetables separately in another tablespoon of oil and 1 teaspoon of salt. When the vegetables are ready, place the salted fish over it.
3. Stir the corn flour into the chicken soup, add in the egg whites and oyster sauce and whip thoroughly.
4. Add in the dried scallops and heat up this gravy mixture.
5. When the gravy is warm, pour it over the vegetables as set aside in step 2 and this colourful dish is ready to be served. Serves 3 to 4 diners.

Golden Pumpkin Rice


Ingredients:

500 grams of diced pumpkin
150 grams of uncooked rice
100 grams of minced lean meat
50 grams of anchovies

Seasoning:
1 tablespoon of sesame oil
2 tablespoons of oyster sauce
A little salt

Cooking Method:
1. Boil the pumpkin until it is half cooked.
2. Fry the uncooked rice together with the anchovies, meat and seasoning.
3. Place the half-boiled pumpkin on top of the rice mixture and steam it in the rice cooker for half an hour. When the rice turns into a golden hue, the dish is ready to be served. Serves 3 to 4 diners.
